Niwaki 'Mainichi' kitchen knife
Mid-size Japanese kitchen knife, suitable for paring, peeling, slicing. Though made in Japan, it is made to the standard Western knife design, ie with a pointed tip. Hard wearing, beautifully crafted, it's a little smaller than a standard 'chef's knife'. Blade length 122mm, total length 227mm, weight 44g. 1k-6 stainless steel blade. Sharpen with a combination stone and camellia oil when needed. Hand wash and dry.
